Cava dedicated to the “pubilla” of Cal Cassanyes, made from two grape varieties. The Xarel·lo comes from the old Cerveres vineyard, planted in 1974, with calcareous clay-loam soil; the Pinot Noir comes from the vineyard called El Pou, also on calcareous clay-loam soil.
Varieties: 50% Xarel·lo aged on lees, 50% Pinot Noir
Sugar: Residual, brut nature
Aging: Minimum 42 months
Production: Hand-harvested in 20 kg crates. Grapes selected on a sorting table. After fermentation, the Xarel·lo ages on its lees for four months, and the Pinot Noir is vinified as a “blanc de noirs.” Manual thinning in a bench.
