Blend of two varieties: Grenache and Pinot Noir. The Pinot Noir and Grenache come from the vineyard called El Pou, with calcareous soil with a silty texture and the presence of clay.
Varieties: Grenache and Pinot Noir.
Sugar: 6 g/l, brut.
Aging: A minimum of 12 months
Preparation: Grapes harvested with a vibrating trailer and selected on a selection table. We do a short maceration in the press to obtain the aromas and preserve the necessary color.
Clarified in a bench.

The winery’s iconic cava, a single-varietal Xarel lo. The grapes come from the old vineyard of Les Cerveres, planted in 1974. Brut nature cava with a minimum of 60 months of aging. Manual harvest in 20 kg boxes and grapes chosen on a selection table. Corked. Fermentation and aging for six months, of 10% of the grapes, in 300 liter French oak barrels. Clarified in a bench and manually disgorged.

ARIADNA GRAN RESERVA
Cava dedicated to the pubilla of Cal Cassanyes. Made with 50% Xarel·lo from the old vineyard of Les Cerveres and 50% Pinot Noir from the vineyard of El Pou. Brut nature with a minimum aging of 42 months. Manual harvest and grapes chosen on a selection table. After fermentation, the Xarel·lo is aged for four months with the lees and the Pinot noir is vinified as “blanc de noirs“. Manual thinning in a bench.

MITIC 1908 GRAN RESERVA
The year 1908 was a legendary year for the family: the new modernist-style cellar was built. This cava is the great classic of Oriol Rossell, made with the two most traditional varieties of the estate: Xarel·lo from the Les Cerveres vineyard and Macabeu from the oldest vineyard of Cal Cassanyes, La Sínia (1959). It is a brut nature with a minimum aging of 36 months. Manual harvest and clarified in a bench.

We use grapes from different vineyards of Cal Cassanyes, our unitary estate located 150 meters above sea level. The soils are predominantly clay loam and some sandy loam, poor and calcareous. Organic viticulture.
