Monovarietal Syrah.
The grapes come from the Manou vineyard, on limestone soil from Saulon with a sandy loam texture. Poor soil on a slope. Lightened between 10 and 15% of the grapes during the verol.
Variety: 100% Syrah
Aging: 8 months in 300 l French oak barrels and a minimum of 6 months in bottle.
Elaboration: Manual harvest in a 500 kg wagon and subsequent selection on a selection table. Prefermentative cold maceration. Fermentation and maceration of the must with the skins for twelve days.

LES CERVERES
Monovarietal Xarel•lo from the old vineyard of Les Cerveres (1974), with calcareous soil and loamy texture. Very low yield vineyard and even so in rainy years a clarification of 15% of the grapes is carried out during the verol to balance the load and promote maturation. Fermentation and aging in oak barrels. Application of batonnage during aging. Minimum of 12 months in bottle. Microvinification.

VALENTINO
Minimal intervention wine, single-varietal Xarel•lo from the Seneco vineyard. Sparkling wine, without any additives and fermented with wild yeasts. It does not contain added sulfites or any other products.
