CAVA ARIADNA

Cava dedicated to the pubilla of Cal Cassanyes, of two varieties. The Xarel·lo is from the old vineyard of Les Cerveres, planted in 1974, on calcareous clay loam soil; the Pinot Noir is from the vineyard called El Pou, on calcareous silty loam soil.

Varieties: 50% xarelello aged in mothers and 50% pinot noir.

Sugar : Residual, brut nature.

Ageing: A minimum of 42 months.

Production : Manual harvest with 20 kg boxes. Grapes chosen on a selection table. After fermentation, the xarel·lo is aged with its lees for four months and the pinot noir is vinified as “blanc de noirs”. Manual thinning in a bench.
