CAVA RESERVA DE LA PROPIETAT ROSÉ

A single variety cava using the pinot noir grape from the Pou vineyard in chalky soil and a sandy-loam texture. Short pruning and cutting back of 30% of the grape in the middle of July, during the ripening period.

Variety: 100% pinot noir

Sugar : 6 g/L

Ageing: Minimum 42 months

Production : Hand-picked in crates of 20 kgs followed by further manual selection in the cellar. Light maceration of the must with the skins prior to fermentation. Manual riddling in riddling racks.
