LES CERVERES

Monovarietal Xarel·lo from the old vineyard of Les Cerveres, on calcareous soil with a loamy texture and planted in 1974. The vineyard has a very low production, however, in years of heavy rainfall, a thinning of 15% of the grapes is carried out during the verol.

Variety: 100% Xarel·lo

Aging : 6 months in a 500 l barrel and a minimum of 12 months in bottle.

Production : Manual harvest in 20 kg boxes and subsequent selection of the grapes on a selection table. Prefermentative maceration of five hours in a closed press. Fermentation and aging in oak barrels of 500 liters capacity. Application of batonnage during aging.
Microvinification.
