Ageing : 5 months on the lees

Production : Manual harvest in boxes of 20 kg capacity. Fermentation in stainless steel tanks at a controlled temperature and subsequent aging in the same container for 5 months, with its own lees that add volume and balance the acidity and structure of the wine.
